Cooking Concoctions: Brinner, Country Scramble

so I know this is a day later then normal for my Cooking Concoctions but it has been a mad dash to complete costumes for the Calgary Comic Expo. So this is quite a simple recipe that my dad taught me when I was younger. it makes for a very hearty meal and serves 6. For dinner this week i was feeding four so there was a little extra, joining me for dinner this week was Kenneth the Third, Blondie and my lovely Wifey. The potato pancakes that are featured in the last picture they were delicious.

So here you go The Country Scramble

Ingredients:
8 Large Eggs (six pictured but used 8)
half a polish sausage
1/2 cup of green onions
1 large head of broccoli
half a large green or red pepper
1/2 cup shredded Swiss Cheese
1/2 cup shredded Cheddar Cheese
1 cup of milk (not pictured but percentage of chefs choice)

Step one is to Blanch the broccoli to do this toss broccoli into some hot water, not boiling, for about five minutes.

Heat a large skillet on the stove

while the broccoli is blanching break the eggs together into a bowel and beat with a fork until well mixed. then add the milk and continue to stir. once well mixed add the mixture to the skillet. continuously stir with a spatula making sure to be constantly moving the cooked egg from the bottom to avoid burning.

once the eggs have started to cook but have not completely cooked add the pepper, onion, broccoli and sausage and continue to cook. sprinkle on some pepper to give some flavor at this point this is optional.

Add both of the swiss cheese and the cheddar once the eggs are almost fully cooked, stir until the cheese is melted and serve.

so unfortunately there wont be any cooking concoctions next week because of the Calgary Comic Expo but will continue the week after.
