Tablespoon of Geek: Back to School Beefy KD Casserole


Good Day all it is the first week of September and for many that means one thing, it is time to go back to school. Not for me this year however but my Wifey will be beginning her long journey to acquire her Bachelor of Commerce. As a student trying to better yourself budgets can be very tight and thus will spend a lot of time eating the same cheap food.

While I was in the tail end of my college career I pretty much lived on Kraft Dinner Macaroni & Cheese. The easy to make cheesy noodle dish quickly became the main staple of my post secondary diet.

I decided with all the people going back to school this month I would take one of the college food staples and make a recipe with it.

So here is my Beefy KD Casserole:

First thing as always let us get some supplies, for this recipe you will need….

1 lb of ground beef
1 cup of Tomato Paste
1 Cup of Cherry Tomatoes Halved
1 ½ Cup of Yellow Onion Chopped
¼ of a Red Pepper Chopped
1 Clove of garlic Crushed
3 Cups of Mozzarella
1 Cup of Parmesan
2 Boxes of KD
Salt pepper and other spices of your choosing


This will make 8 servings that can be stored and eaten throughout a week or frozen for a later date.

Before we start any of the cooking steps turn your oven on to bake setting at 350 degrees

The First step in the process is to make the Kraft Dinner macaroni as instructed on the side of the box. Hopefully you have made Mac & Cheese at least once before in your life before doing this if not it is really easy. Everyone has a different method for making KD my Wifey likes extra butter whereas I like to use extra Milk. Once done put this aside on an element set to a low simmer.

Next take a large skillet a bring up to heat with some cooking oil in it, once the skillet is up to heat then add the Ground Beef. Cook and turn for a little bit until the meat has started to brown a little bit, once browning has begun add the Tomato Paste and mix in. The paste will begin to boil and the meat will continue the browning process at this point add in the Yellow Onion, Red Pepper, Cherry Tomatoes and Garlic. Keep mixing things so that everything has a chance to cook thoroughly and while this is happening add in Salt, Pepper and Other Spices.

Once the meat is cooked properly you will need to move the skillet off of the element and place to the side. At this point in the entire process you will need to get ready a medium sized Casserole dish to put everything in, it is best to coat the sides of the dish with oil for later. Next take the cooked meat part and place half of it at the bottom of the casserole dish, this will be the first layer. Next put half of the prepared Kraft Dinner goes on top of the meat to make the next layer, make sure that with each layer you spread it out evenly to the edges of the dish. Alright so the next layer is where you take the cheeses and distribute them ½ cup of Parmesan and 1 and a ½ cups of Mozzarella spread to the edges. There are another three layers in the order of the last of the meat followed by the rest of the Kraft Dinner and then top it all off with the remaining cheeses.

Place the dish and all of its contents into the preheated oven to bake for a measly 10 min.

After that timer of yours dings and you remove the dish from the oven you are going to have to wait 5 minutes. Let it cool down so you don’t burn your tongue.


Now cut it into portions and serve it out, like I said this makes a lot it can serve up to eight people. I stored a bunch in my deep freeze to eat at a later date or for an emergency lunch on the go if I need it.

Wow from Around the Net: 80's Star Wars


Sometimes I find that I like to take a movie or show I like and imagine what it would happen if it was a different genre. For example let us imagine if the movie Fight Club had been a Victorian era historical piece, think of how different that would be. Ok that was off the top of my head and I think I need to actually make that one day.

The internet is filled with images of major geekdoms that an artist has gone and changed the genre. Hell I would say that at least 40 percent of Deviant Art is made up of such pieces of fan art, this is just a hyperbole and not an actual statistic.

On Deviant Art I found this artist by the handle DenisM79 who decided that it would be interesting to take the Star Wars movies and re-imagine them as an 80’s high school film. Think Ferris Bueller’s meets the lost boys and I think that is what this film would be like if it was real. Even if it isn’t real I think that the concept art is awesome and if you are a DA user this artist is worth watching.






I would watch the shit our of this film I swear by that, maybe head over to DA and send DenisM79 a llama badge, I know I did.

Weekend Adventures: IGSA


When I was a kid I tried my hand at skateboarding like most little boys my age because Bart Simpson made it look so cool. Due to my short size I have low center of gravity and therefore amazing balance but in the end I was terrible and quickly gave up on this hobby. Long did my severely lacking boarding skills lay dormant until a good friend of mine introduced me to Long Boarding.

I am not quick on a long board but that doesn’t stop me from enjoying a good ride as a means of transportation this is not a bad option. The feel of the wind as it laps at my face while I casually coast down the street is actually very refreshing. By no means am I the type of long board rider who has a need for speed when it comes down to this medium of transport, I am still fresh to this whole thing.

Over the weekend there was a large organized event that highlights the super stars of the long boarding sport. The Labor Day weekend brought with it a event sponsored by the IGSA (International GravitySports Association) at COP (Canada Olympic Park) here in Calgary. IGSA World Championship happened all weekend with the qualifying heats happening on Saturday and the final heat being on Sunday.

Since Devo is the one who introduced me to the wonderful world of long boarding I think it was only fitting that I took him to this event. I always enjoy going out to festivals and events like this with my camera in tow to learn new things and to see what I can see. I am glad that I took Devo with me because of him running into an acquaintance we each got a free shirt and I love free swag. 



Devo and I hiked up along the track with my camera in tow and I got a lot of amazing shots of the street lugers and the downhill skateboarders. We positioned ourselves on the side of a hair pin turn and got a great view of all the racers as they careened down the slope.

















This was an awesome event to watch and to think some of these guys were clocking 90 km/hr standing on a piece of wood with wheels it is nuts.

Weekend Adventures: XFest


The worst feeling is being more tired after a long weekend then you felt before going into the weekend. Here in Canada we observed a statutory holiday that extends the first weekend of September called Labor Day. Quick Fact, This holiday was originally set up by the trade unions to give a day for workers to stand up for their rights and celebrates the achievements of the workers.

 I hope that little tidbit of knowledge was informative and expanded your mind, I found it interesting. That was then however now most people use the weekend as ether an excuse to party if you are over a certain age or if you have younger children in your care it is a crazy back to school shopping time. For me it was a busy weekend filled with events.

I will break up my accounts of the events so as not to give anyone an information overload today. Being that today is the first day for students to go back to classes the one thing that nobody wants is to have an information overload.

Saturday was an outdoor music festival put on by my favorite local radio station, the event is called XFest. What was significant about this show is that it was the first time that one of my favorite bands from high school, Linkin Park, has ever played anywhere near Calgary.  I got there a little bit later and missed a majority of the acts and it took me a while to get anywhere near the stage.

Right inside the main gates of the festival of alternative rock was a big bunch of food trucks to which we could enjoy their delicacies. My companion Kenneth the Third and myself decided that we would give one called H-Appy Truck a try. I got myself a specialty smokie called the Colombian, a fully loaded hot dog that was utterly delicious. I was very proud of myself for not getting any of this dish’s toppings on my shirt, I tend to be a messy eater to be honest.

I got to watch the Silver Sun Pickup’s set and of course the Linkin Park set, My phone camera is not the best but I would never risk taking my good camera. The only reason I can think of taking my good camera is if I don’t plan on having any fun. The light show that Linkin Park Preformed was way to intense for my measly iPhone camera to do justice for but trust me was awesome.



I had a blast and I must thank Mr. Kenneth the Third for thinking of me when he happened upon an extra ticket.
